1lb hamburger

1 15oz can of black beans

1/3 cup onion

1 ½ cups of uncooked white rice

1/4 tsp garlic salt

½-1tsp Italian seasoning

Dash black pepper

3 c plus 1/4c of water

This is a fast and inexpensive meal that my whole family loves.

In a medium saucepan add rice and 3 cups of water. For this recipe I am using white uncooked rice, not instant or brown rice. Bring to a boil, uncovered and reduce heat to medium for about 20 minutes, stirring twice.  Rice will absorb the water. Do not overcook.

In a frying pan brown hamburger and onion, drain grease. Season hamburger with garlic salt, pepper and Italian seasoning. Open black beans and pour into a colander, rinse well with cool water. Add black beans to hamburger mixture and ¼ c of water and heat on simmer, stirring occasionally. Do not overheat the beans.

Spoon rice onto the plate and then the hamburger and black bean mix over that. My husband likes to eat his with ketchup!

Makes 6-8 servings

Sounds delicious, Krista. I would like to try it since it seems simple and easy.

Thanks for sharing.
It is amazing what you can do with one pound of hamburger and some beans. I'm not fond of rice though and wonder if you can substitute really small chopped potatoes or previously cooked potatoes. What do you think?

You could try potates or pasta. We have never tried it with either one. Let me know if you try it and how it tastes!
